Sweet Yogurt/ Mishti Doi

For Mishti Doi

Ingredients:

  • Full Cream Milk : 1ltr
  • 300 gm palm jaggery
  • Yogurt  1 tablespoon
  • 1 Earthen pot (optional)

Method:

  • Pour the milk in a thick bottom vessel and start heating over low flame and reduce it to 1/4th its quantity. Heat the jaggery in another heavy saucepan and melt it using water.
  • Pour melted jaggery to boiling milk and stir well.
  • Cook for another 5 mins.
  • Pour the milk over the earthen pot and add the yogurt. Keep in cool and dry place. Let yogurt set overnight.
  • Keep in refrigerator.
  • Serve chilled.

      Palm jaggery is darker and richer in color, it is somewhat salty in content, and it is certainly healthier food. It is made up of palm sap. I never use any other jaggery for mishti doi. If it is not available you can use sugar. But palm jaggery is the best. :)
