For Mishti Doi
Ingredients:
- Full Cream Milk : 1ltr
- 300 gm palm jaggery
- Yogurt 1 tablespoon
- 1 Earthen pot (optional)
Method:
- Pour the milk in a thick bottom vessel and start heating over low flame and reduce it to 1/4th its quantity. Heat the jaggery in another heavy saucepan and melt it using water.
- Pour melted jaggery to boiling milk and stir well.
- Cook for another 5 mins.
- Pour the milk over the earthen pot and add the yogurt. Keep in cool and dry place. Let yogurt set overnight.
- Keep in refrigerator.
- Serve chilled.

Palm jaggery is darker and richer in color, it is somewhat salty in content, and it is certainly healthier food. It is made up of palm sap. I never use any other jaggery for mishti doi. If it is not available you can use sugar. But palm jaggery is the best.

I love Mishti Doi….and would have tried it but gur (palm) is not available in Delhi.
