Ingredients:
mustard oil to fry
1 tsp turmeric powder
salt to taste
1 big size eggplant
How to make begun bhaja :
- Wash and cut the eggplant into half inch round slices.
- Apply salt and turmeric powder.
- Heat up the oil in a pot to smoking point.
- Take off heat, cool slightly and then reheat.
- Fry the eggplant pieces till crunchy and brown.
Serve hot.

It is produced from black mustard. Mustard oil has a strong smell and a hot nutty taste.·Mustard oil is widely known for its sharp, pungent flavor. I use mustard oil basically when i cook traditional bengali food.
